Hadn’t made bread in a while, but I wanted something plain that could work with any kind of sandwich. ‘Course, I can’t not add something to it anyway! This one’s California Nut Bread on page 319 of The Bread Lover’s Bread Machine Cookbook, but I’ve altered it for laziness and what I had on hand:
1 1/4 Cup Milk
1/3 Cup Olive Oil
3 Cups Bread Flour
1 TBS Dark Brown Sugar
1 1/2 TSP Salt
2 1/2 TSP Yeast
Basic cycle, Dark crust.
When machine beaps for additions, add:1 overflowing cup of walnuts, preferably toasted
I didn’t have to babysit the bread much, just a little stir as usual to make sure all the flour in the corners was incorporated.
I don’t have any photos of the bread while mixing, or after, because we ate it too fast. The nuts added an interesting texture, taste, and a little protein, which made it less blood-sugar-spiking.
I’ll totally be making this bread again because other than the nuts, and choosing a different kind of sugar, this bread is almost as basic as you can get.
